A family favorite that is an alternative to pumpkin pie. Lots more servings!!

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • half teaspoon salt
  • 15 ounces pumpkin
  • 1 cup oil
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 4 - eggs

How To Make pumpkin bars with icing

  • Step 1
    Preheat oven to 350. Grease one 15X10 jelly roll pan
  • Step 2
    Blend all ingredients at low speed until moistened, then mix for 2 minutes at medium speed. Pour into prepared pan. Bake at 350 for 25-30 minutes until toothpick inserted in center comes out clean. Cool completely and then frost with the following.
  • Step 3
    Make a frosting of: 2 cups powdered sugar, one third cup of softened margarine, 3 ounces of softened cream cheese, 1 tablespoon milk and 1 teaspoon vanilla extract. Combine and beat with electric mixer until smooth. Spread over cooled bars.
  • Step 4
    Store in refrigerator.
