pistachio fudge with almond extract

I love fudge. I love almond. I love pistachio. So here is a favorite that combines them all, and is so easy you will double the recipe too!

yield single batch 2 1/2 lbs, double batch 5 lbs

Ingredients

  • 24 ounces white chocolate chips
  • 14 ounces sweetened condensed milk
  • 1-3 teaspoon almond extract, to your preference (i used about 2 1/2)
  • green food coloring
  • 1/2 cup shelled chopped pistachios (could use half that if you want)

How To Make pistachio fudge with almond extract

  • Step 1
    For this, you don't want salted pistachios, if you buy them already shelled...
  • Step 2
    Melt chocolate and milk in double boiler. Remove from heat, stir in extract and food coloring to the color you like. Add nuts, mix well. Spread evenly into wax paper lined pan (I double this and use a 9x13 to make about 5 pounds fudge). Cover tightly and chill. Store in freezer. Take out to thaw before serving.
