·1/2 c sugar
·5 t flour
·1 c strained orange juice
·1 t lemon juice
·1 egg yolk
·3 t butter
·2 t grated orange rind
·2 1/2 slices canned pineapple-cut fine
How to Make Pineapple Filling
- The only one I found is called Orange Pineapple Filling.
Mix 1/4 c sugar with the flour in a double boiler.
Add the fruit juices & pineapple.
Cook over boiling water, while stirring, til smooth & thickened.
Pour mixture slowly over the beaten egg yolk, which has been blended with the remaining 1/4 c sugar, while stirring constantly.
Then return to double boiler, and cook 2 minutes longer.
Add the remainingingredients & cool.
Use as a filling between the layers of a cake or torte.
