My assistant brought these in to work one day just before time for performance review__ ;-)

Ingredients

  • 2 packages (8 oz) cream cheese, softened
  • 3/4 cup sugar
  • 2 - eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 24 - vanilla wafers cookies
  • 1 clove (21 oz) cherry pie filling

How To Make petite cheesecakes

  • Step 1
    Line muffin tins with paper cups. Place one wafer, rounded side down in each cup. Heat oven to 375.
  • Step 2
    Beat cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill each cup 2/3 full of mixture. Bake for 15-18 minutes till set.
  • Step 3
    Cool and then top with pie filling, 1 Tbsp on each cup and chill.
