peggy morgan butter tarts

My mom used to work at curling rink concession. Peggy made the butter tarts in the kitchen. Mom says they never lasted, long as they were a best seller. Peggy gave the recipe to Mom and passed it on to me. I only added the raisins and walnuts as optional. Enjoy!

    eggs
  • 3 c
    brown sugar
  • 1/2 c
    butter, melted
  • 1/2 tsp
    salt
  • 1 Tbsp
    vanilla
  • 1 c
    raisins (optional)
  • 1 c
    walnuts (optional)

    Pre heat oven to 375 C

    Mix in brown sugar, melted butter, and eggs until light and fluffy..

    Add salt and vanilla

    Add raisin and or walnuts to each tart shell

    Pour batter into each tart shell.
