This is a very simple recipe. I make these when my sweet tooth acts up.

Ingredients

1 cup chopped pecans
1/2 cup flour
1 cup brown sugar (i use splenda brown)
1/2 cup butter, melted
2 - eggs
1 teaspoon vanilla extract

How To Make pecan pie muffins

Step 1

Pre-heat oven 350^ Melt the butter, beat in the two eggs, add dry ingredients and mix well. Add the Vanilla.

Step 2

Fill the muffin cups 2/3 full
Step 3

Regular muffins, 20~25min...Mini muffins, 16~18min.
