peanut butter chews

This is a recipe that came from the Cafeteria Ladies at Benito Juarez Elementary School in San Diego, Ca. They would make these and sell them outside in the patio area after we had lunch. I have such fond memories of these chews and everytime I make them I am reminded of my days at Juarez.

Ingredients

  • 2/3 cup shortening (butter or margarine
  • 1 cup brown sugar
  • 2 cups sugar
  • 1 cup peanut butter, creamy
  • 4 - eggs
  • 1 1/2 teaspoons vanilla
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 cup oatmeal, uncooked

How To Make peanut butter chews

  • Step 1
    Combine shortening, sugar, peanut butter, eggs and vanilla. Blend at low speed.
  • Step 2
    Combine flour, baking powder, salt. Add to first mixture. Add oatmeal and mix well. Spread onto ungreased cookie sheet. Bake at 350 for 25 minutes. DO NOT OVERBAKE
  • Step 3
    Icing- 1/2 cup powdered sugar, and 1 tsp milk Mix together and spread on warm chews-cut when warm, remove when cool. You may need more or less icing depending on your like.
