I'm not a fan of fudge brownies, but love blondies. Chocolate chips can also be used instead of butterscotch.

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup peanut butter, smooth or crunchy
  • 3 - eggs
  • 1 stick butter, room temperature (unsalted)
  • 1 teaspoon pure vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 ounces butterscotch chips (or more, if you like)

How To Make peanut butter blondies

  • Step 1
    Preheat oven to 350°.
  • Step 2
    In a large mixing bowl, cream together the sugar, peanut butter, eggs, butter and vanilla.
  • Step 3
    In a separate bowl, mix together the flour, baking powder and salt.
  • Step 4
    Add the dry ingredients to the wet ingredients and mix until smooth. Stir in butterscotch chips
  • Step 5
    Spread into an ungreased 9x13 pan
  • Step 6
    Bake at 350° for about 35 minutes. They will be cracking and brown around the edges when done. Cool, cut and serve.
