peanut butter berry bars
Summer is a good time to stock up on berries or fruit from your own garden, a farmers' market or directly from the orchard. These bars are reminiscent of PB&J flavors. Use whatever fruit you like, but be sure to chop peaches or large berries. Adapted from the Chicago Tribune food section.

Ingredients
- 1/2 cup unsalted butter (1 stick)
- 1 cup peanut butter (or almond butter)
- 1/2 cup brown sugar, packed
- 3/4 cup sugar, granulated
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 10 ounces frozen berries, any kind or mixture
How To Make peanut butter berry bars

Step 1Preheat oven to 350ºF. Grease a 8 or 9 inch square pan and also line with parchment paper. Let it extend over edges to make removal easier.

Step 2Stir together the butter, peanut butter, brown sugar and 1/2 cup of white sugar until well mixed. Beat in egg and vanilla.

Step 3Mix in flour, salt and baking powder.

Step 4Put 2/3 of batter in pan, press to cover bottom.

Step 5In another bowl, toss the FROZEN berries or desired fruit with remaining white sugar. Scatter over dough. Sprinkle remaining dough over fruit.

Step 6Bake until golden brown, about 45 - 50 minutes. Fruit will be bubbling. Cool completely before you slice.
