Ingredients
- 4 large egg whites
- 1 cup caster sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1/2 tablespoon corn starch
- 1 cup mixed fruits
- 1/2 cup whipped cream, sweetened

Step 1PREHEAT OVEN TO 250*F OR 130*C. USING AN ELECTRIC MIXER BEAT EGG WHITES ON MEDIUM SPEED TILL SOFT PEEKS FORM.

Step 2START ADDING SUGAR SLOWLY AND BEAT ON HIGH SPEED TILL FIRM PEAKS FORM. ADD VANILLA EXTRACT AND BEAT ONCE. SPRINKLE VINEGAR AND CORNSTARCH AND FOLD IN.

Step 3TRANSFER CONTENTS TO A BAKING SHEET LINED WITH PARCHMENT AND SHAPE ACCORDING TO YOUR CHOICE. BAKE FOR 60 - 75 MINS. THE OUTER LAYER SHOULD BE HARD ON TAPPING WITH THE BACK OF A SPOON.

Step 4SWITH OFF THE OVEN,OPEN OVEN DOOR SLIGHTLY AND LET COOL COMPLETELY INSIDE THE OVEN. DO NOT TAKE OUT FOR 30 MINS.

Step 5GENTLY SPREAD AN EVEN LAYER OF WHIPPED CREAM ON THE PAVLOVA. DO NOT APPLY TOO MUCH PRESSURE AS THE PAVLOVA MAY COLLAPSE IN THE CENTRE. DECORATE WITH FRUITS OF YOUR CHOICE. STORE IN THE REFRIGERATOR IN AN AIR TIGHT CONTAINER.
