Cheesecakes are my passion.I have perfected for my tastes a NY style cheesecake that is dense, yet smooth and creamy. I prefer no crusts as I savor the cheesecake filling. People tell me this is the best they have tasted. I prefer baking in water baths to prevent cracking. Also note in recipe eggs are added in last and at low speed to prevent a large puff and fall.Enjoy

Ingredients

  • 5 pkg - 8 oz. @ cream cheese
  • 1 cup - sour cream
  • 1 cup - heavy cream
  • 1 cup - sugar
  • 4 large - eggs
  • 1 Tbs - cornstarch
  • 2 tsp - vanilla
  • - topping of choice

How To Make party cheesecake ,ny style

  • Step 1
    Preheat oven to 300f butter bottom and sides of a deep 9 inch springform pan sprinkle bottom and sides with graham cracker crumbs or chocolate or Vanilla wafer crumbs wrap pan bottom and sides with foil
  • Step 2
    Beat softened cream cheese lump free
  • Step 3
    Beat in sugar,vanilla and a pinch of salt
  • Step 4
    Beat in sour cream and Heavy cream to blend smooth
  • Step 5
    Sprinkle on cornstarch and blend in well
  • Step 6
    In a separate bowl beat eggs together
  • Step 7
    Then with beaters at low speed blend in eggs into cream cheese mixture
  • Step 8
    Carefully pour mixture into prepared pan
  • Step 9
    Place cheesecake pan into a roasting pan that has been filled with water that comes up halfway up cheesecake pan
  • Step 10
    Bake in center rack until mixture is set , may be 1 1/2 to 2 hours in oven
  • Step 11
    Remove from water bath,remove foil Let set on cooling rack to cool completely
  • Step 12
    Chill overnight Remove sides of pan Add topping of choice keep well chilled but remove pan from fridge 1/2 hour before serving
