My mom got this recipe from her English neighbor, in the 1940's. It's so easy to make and tastes tart, yet with a sweetness to it. It's delicious and nice and refreshing. It certainly doesn't last long in our home; always have to bring some when visiting my brother! Bet you can't eat just one! Enjoy....makes a nice summer treat.

Ingredients For no bake lemon squares

  • 1 box
    graham crackers
  • 1 can
    sweetened condensed milk
  • 3 lg
    lemons

How To Make no bake lemon squares

    Line an 8" by 9 " square pan with a layer of graham crackers.

    In the meantime, squeeze the lemons and reserve all of the juice from the three lemons. Pour sweetened condensed milk into a medium sized bowl. Pour the lemon juice into the condensed milk and stir until smooth and creamy, about 60 seconds.

    Pour half of the lemon mixture over the prepared graham crackers; repeat with another layer of graham crackers over the lemon mixture. Pour the remaining lemon mixture over the second layer of graham crackers. Crush a couple of the crackers and sprinkle over the top. Place in refrigerator overnight. By morning, the mixture will have soaked into the crackers and also will have thickened to a yummy, mouth puckering dessert. Hope you enjoy this dessert as much as our family does.
