  • 1/2 c
    unsalted butter
  • 1/4 c
  • 5 Tbsp
    cocoa powder, unsweetened
  • 1
    egg, beaten
  • 1 3/4 c
    graham cracker crumbs
  • 1 c
    coconut, sweetened
  • 1/2 c
    almonds, finely chopped

  • 1/2 c
    unsalted butter, room temperature
  • 3 Tbsp
  • 2 Tbsp
    vanilla custard powder
  • 2 c
    powdered sugar
  • ICING:

  • 4 oz
    semisweet chocolate (4 squares)
  • 2 Tbsp
    unsalted butter

How to Make Nanaimo Bars


  1. For 1st Layer:
    Place butter, sugar and cocoa powder in double boiler over barely simmering water.
  2. Stir occasionally until melted.
  3. Add egg and stir to cook and thicken.
  4. Remove from heat and stir in graham wafer crumbs, coconut and almonds.
  5. Press firmly in ungreased 8-inch square pan. Chill.
  6. For 2nd layer:
    Cream together butter, cream and custard powder together in bowl.
  7. Gradually beat in icing sugar until light and fluffy.
  8. Spread over first layer. Chill.
  9. For Icing:
    Melt chocolate and butter in top of double boiler over barely simmering water (or in microwave).
  10. Stir to combine.
  11. Cool to room temperature.
  12. Spread evenly over 2nd layer with spatula. Chill.
  13. Cut into bars.
  14. MAKES: 16-24 bars
