This recipe was a contest winner for best Nanaimo bar in Nanaimo, British Columbia. They are very sweet! From the Toronto Sun.

Ingredients

  • FIRST LAYER:
  • 1/2 cup unsalted butter
  • 1/4 cup sugar
  • 5 tablespoons cocoa powder, unsweetened
  • 1 - egg, beaten
  • 1 3/4 cups graham cracker crumbs
  • 1 cup coconut, sweetened
  • 1/2 cup almonds, finely chopped
  • SECOND LAYER:
  • 1/2 cup unsalted butter, room temperature
  • 3 tablespoons cream
  • 2 tablespoons vanilla custard powder
  • 2 cups powdered sugar
  • ICING:
  • 4 ounces semisweet chocolate (4 squares)
  • 2 tablespoons unsalted butter

How To Make nanaimo bars

  • Step 1
    For 1st Layer: Place butter, sugar and cocoa powder in double boiler over barely simmering water.
  • Step 2
    Stir occasionally until melted.
  • Step 3
    Add egg and stir to cook and thicken.
  • Step 4
    Remove from heat and stir in graham wafer crumbs, coconut and almonds.
  • Step 5
    Press firmly in ungreased 8-inch square pan. Chill.
  • Step 6
    For 2nd layer: Cream together butter, cream and custard powder together in bowl.
  • Step 7
    Gradually beat in icing sugar until light and fluffy.
  • Step 8
    Spread over first layer. Chill.
  • Step 9
    For Icing: Melt chocolate and butter in top of double boiler over barely simmering water (or in microwave).
  • Step 10
    Stir to combine.
  • Step 11
    Cool to room temperature.
  • Step 12
    Spread evenly over 2nd layer with spatula. Chill.
  • Step 13
    Cut into bars.
  • Step 14
    MAKES: 16-24 bars
