Ingredients
- FIRST LAYER:
- 1/2 cup unsalted butter
- 1/4 cup sugar
- 5 tablespoons cocoa powder, unsweetened
- 1 - egg, beaten
- 1 3/4 cups graham cracker crumbs
- 1 cup coconut, sweetened
- 1/2 cup almonds, finely chopped
- SECOND LAYER:
- 1/2 cup unsalted butter, room temperature
- 3 tablespoons cream
- 2 tablespoons vanilla custard powder
- 2 cups powdered sugar
- ICING:
- 4 ounces semisweet chocolate (4 squares)
- 2 tablespoons unsalted butter
How To Make nanaimo bars

Step 1For 1st Layer: Place butter, sugar and cocoa powder in double boiler over barely simmering water.

Step 2Stir occasionally until melted.

Step 3Add egg and stir to cook and thicken.

Step 4Remove from heat and stir in graham wafer crumbs, coconut and almonds.

Step 5Press firmly in ungreased 8-inch square pan. Chill.

Step 6For 2nd layer: Cream together butter, cream and custard powder together in bowl.

Step 7Gradually beat in icing sugar until light and fluffy.

Step 8Spread over first layer. Chill.

Step 9For Icing: Melt chocolate and butter in top of double boiler over barely simmering water (or in microwave).

Step 10Stir to combine.

Step 11Cool to room temperature.

Step 12Spread evenly over 2nd layer with spatula. Chill.

Step 13Cut into bars.

Step 14MAKES: 16-24 bars
