mom duncan’s cream puffs
This was one of my husband’s favorite dessert that his Mom made. She is gone now and I got her recipe. I make these for my husband on special days, like today, Father’s Day.

Ingredients
- PASTRY PUFF
- 1 cup water, boiling
- 1/4 teaspoon salt
- 4 large eggs
- 1/2 cup butter, unsalted
- 1 cup all purpose flour
- CREAM FILLING
- 2/3 cup sugar
- 1/2 cup all purpose flour
- 1/2 teaspoon salt
- 2 cups milk, scalded
- 2 large eggs, beaten
- 1 teaspoon vanilla extract

Step 1FOR PASTRY: Bring water, salt, and butter to a boil. Add Flour all at once.

Step 2Cook, stirring constantly until mixture leaves the sides of the pan. Cool.

Step 3After mixture is cool, add eggs one at a time, beating until smooth after adding each egg.

Step 4Drop by heaping tablespoon on to greased cookie sheet.

Step 5Bake in preheated 450• oven for 15 minutes, then reduce temperature to 350• for additional 20 minutes.

Step 6When completely cool stuff with cream filling.

Step 7CREAM FILLING: Mix all ingredients except eggs and vanilla in double boiler for 10 minutes.

Step 8Add beaten eggs, cook 2 minutes longer. Cool and add vanilla.

Step 9I used a Pampered Chef Pastry filler and it was so easy to insert filling. If you don’t have a pastry filler, you can take a small spoon and scoop into the side of the pastry and fill.
