1/2 c
graham crackers crumbs
2 Tbsp
butter or margarine; melted
8 oz
cream cheese, softened
1/4 c
1/2 tsp
vanilla extract
2 Tbsp
strawberry preserves

How to Make Miniature Cheesecakes


  • 1Combine graham cracker crumbs and butter, stirring well.
  • 2Line 1 3/4 inch muffin pans with miniature paper liners.
  • 3Spoon 1 teaspoon crumb mixture into each liner; gently press into bottom.
  • 4Beat cream cheese at high speed of an electric mixer until light and fluffy; gradually add sugar, and miz well.
  • 5Add egg and vanilla, beating well.
  • 6Spoon mixture into liner.
  • 7Bake at 350 for 10 minutes.
  • 8Spoon about 1/4 teaspoon strawberry preserves over each cheesecake. Chill thoroughly.
