  • 1/2 c
    graham crackers crumbs
  • 2 Tbsp
    butter or margarine; melted
  • 8 oz
    cream cheese, softened
  • 1/4 c
  • 1
  • 1/2 tsp
    vanilla extract
  • 2 Tbsp
    strawberry preserves

How to Make Miniature Cheesecakes


  1. Combine graham cracker crumbs and butter, stirring well.
  2. Line 1 3/4 inch muffin pans with miniature paper liners.
  3. Spoon 1 teaspoon crumb mixture into each liner; gently press into bottom.
  4. Beat cream cheese at high speed of an electric mixer until light and fluffy; gradually add sugar, and miz well.
  5. Add egg and vanilla, beating well.
  6. Spoon mixture into liner.
  7. Bake at 350 for 10 minutes.
  8. Spoon about 1/4 teaspoon strawberry preserves over each cheesecake. Chill thoroughly.
