How to Make Mini Cheesecakes
1Line a muffin tin with foil liners. Place one vanilla wafer in each liner.
2Mix cream cheese, vanilla, and sugar on medium speed until blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full.
3Bake 25 minutes at 325 degrees.
When cool, remove from pan. Chill. Top with fruit, preserves, nuts, pie filling or whatever you like!
Makes 12 mini cheesecakes.
