These are so good and easy to take for a get together. Be creative and make with different toppings!

Ingredients

  • 12 - vanilla wafers
  • 2 - 8 oz. packages crean cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 - eggs

How To Make mini cheesecakes

  • Step 1
    Line a muffin tin with foil liners. Place one vanilla wafer in each liner.
  • Step 2
    Mix cream cheese, vanilla, and sugar on medium speed until blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full.
  • Step 3
    Bake 25 minutes at 325 degrees. When cool, remove from pan. Chill. Top with fruit, preserves, nuts, pie filling or whatever you like! Makes 12 mini cheesecakes.
