Ingredients

  • 2/3 cup graham cracker crumbs
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 2 packages 8oz cream cheese
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 2 - eggs
  • - favorite pie filling

How To Make mini cheesecakes

  • Step 1
    Preheat oven to 325. In a small bowel combine the first three ingredients and stir with a fork. Lightly butter a 12 count muffin pan. add graham cracker mixture by the tablespoonfuls to each muffin cup and press firmly and sit aside.Cream together all other ingredients except eggs. Add eggs and beat well.Spoon cream cheese mixture into each muffin pan about 3/4 full. Bake for 25mins or until firmly set. Cool and top with your favorite pie filling. Refrigerate until ready to serve. Enjoy!
