maple pecan cupcakes

This is a new one I worked on last week. Be sure to toast your pecans to bring out the flavor.

Ingredients

  • 1 stick butter, unsalted room temp.
  • 1/4 cup brown sugar, firmly packed
  • 2/3 cup pure maple syrup
  • 2 - eggs
  • 1 cup self rising flour
  • 1/2 cup pecans, in pieces

How To Make maple pecan cupcakes

  • Step 1
    Preheat oven to 350 .Beat butter and sugar in bowl until creamy,then beat in maple syrup Add eggs one at a time,then sift flower into mixture and fold in along with the pecans.
  • Step 2
    soon mixture into paper liners and bake for 17 to 20 minutes or until skewer inserted into center comes out clean. Let cool completely before frosting.
  • Step 3
    For frosting : 12 pecan halves toasted 3 tablespoons unsalted butter at room temp. 4 oz cream cheese 4 tablespoons maple syrup 2 cups confectioners sugar sifted beat together butter, cream cheese and syrup. Add sugar and mix until smooth and creamy.Spread over cupcakes and to with pecan halves.
