luc's crêpes
This is a recipe that my husband makes every weekend. We pour on real maple syrup and roll them up! This recipe could also be used for dessert crêpes or savory crêpe dishes. Makes about 20, 8" crêpes.

- 3 cups white flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 teaspoon pure vanilla extract
- 4 - large eggs
- 4 tablespoons butter, melted
How To Make luc's crêpes
-
Step 1Bring the milk to room temperature.
-
Step 2Mix the flour, salt, baking powder and sugar together. Put this mixture in the mixing bowl.
-
Step 3Slowly stir in about 1/2 of the milk, or a bit more, to get a smooth, thick mixture.
-
Step 4In a separate container, lightly beat the eggs.
-
Step 5Add the melted butter (not too hot), eggs and rest of the milk to the mixer.
-
Step 6Add the vanilla
-
Step 7Let rest a few minutes before cooking.
-
Step 8Grease your pan. Pour about 1/4 of a cup of batter at a time into a hot pan, depending on the size of pan you are using. Swirl it around to thin it out a little bit. Cook until brown and flip. Brown the second side.
