I love everything zucchini! So many people turn their noses up when you tell them it contains zucchini. To be honest, the zucchini really gives your baked goods no flavor at all. It just makes things super moist! Please give this a try before you dismiss it because of the zucchini! You will be pleasantly surprised!

    flour
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 2 c
    shredded zucchini
  • 1 c
    vegetable oil
  • 4 large
    eggs
  • 4 tsp
    cinnamon
  • 1 tsp
    salt
  • 1 1/2 c
    sugar
  • 1/2 c
    chopped pecans

How to Make Lori's Zucchini Bars

Step-by-Step

  1. Combine all ingredients except the nuts and beat well. Stir in the nuts and spread in an ungreased 15x10x1 pan. Bake at 350 degrees for 25 to 30 minutes. Once cooled, these bars can be frosted with your favorite homemade frosting or store bought frosting.
