This light chocolate cheesecake is my good go-to for craving a chocolate dessert without the guilt. This is rich and creamy, full of flavor. If you’re a chocolate lover, you will love it. Losing 95 lbs. was tough, I have managed to maintain my weight for 9 years, but staying there is even tougher. I enjoy sharing my recipes to help others who love tasty foods and want to maintain a healthy lifestyle and can enjoy without the guilt.

Ingredients

  • 1 cup Fage fat free yogurt
  • 1 cup lite cream cheese softened
  • 2 large eggs
  • 3/4 cup Swerve confectioners sugar
  • 1/3 cup unsweetened cocoa powder or unsweetened black cocoa powder
  • 3 tablespoons all-purpose flour
  • 1 1/2 teaspoons pure vanilla extract

How To Make light chocolate cheesecake

  • Step 1
    Preheat oven to 325 degrees F. Prepare a 7 1/2 inches wide by 2 inches deep cheesecake pan, by buttering the bottom and all sides. Then line the bottom with parchment paper and butter the parchment paper on the bottom again.
  • Step 2
    Add all ingredients to a mixer until smooth.
  • Step 3
    Pour into the prepared cheesecake pan and bake at 325 degrees F for 1 hour and 30 minutes. Some ovens are hotter than others, so cooking time may vary, so test the center with a toothpick to check if it comes out clean, do not overcook. I put my cheesecake on a cookie sheet to make it easy to remove from the oven.

    Optional This dessert is not over-sweet, you can add more sweetener if you want a little sweeter. I used black cocoa powder because I love dark chocolate. I found black cocoa powder on Amazon; all brands are good. Serve with light whipped cream and or fruit of your choice. I loved this with a glass of dry red wine or just a cup of coffee. It's rich and moist so a small slice will satisfy that sweet chocolate craving without the guilt.
