Ingredients
- 1 cup sugar
- 4 tablespoons flour
- 1/8 teaspoon salt
- 2 tablespoons melted butter
- - one lemon rind, grated
- 5 tablespoons lemon juice, fresh
- 1 1/2 cups whole milk
- 3 - egg yolks, well beaten
- 3 - egg whites, stiffly beaten
How To Make lemon cups

Step 1Oven at 325 degrees

Step 2Prepare a hot water bath - a 9 x 12 metal baking pan. Add enough water that would come up almost to top of GREASED custard cups (I heat this up in the oven while making recipe)

Step 3Combine sugar, flour, salt, butter

Step 4Mix juice and rind, and add to sugar mixture

Step 5Combine egg yolks and milk and add to above mixture. Mix well

Step 6Fold in egg whites, pour into greased custard cups

Step 7Bake in pan of hot water (water bath) for approximtely 45 minutes
