laurie's quick cheesecake
My sister Laurie gave me this recipe. It is so quick and easy. No baking so it makes a great summer desert when you don't want to heat up the oven. Delicious!

Ingredients
- 1 1/2 sticks butter, melted
- 2 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 16 ounces cream cheese
- 2 cans sweetened condensed milk
- 1/2 cup lemon juice
- 2 teaspoons vanilla extract
How To Make laurie's quick cheesecake

Step 1CRUST: Place 1 1/2 sticks of butter in a 9x13 cake pan. Microwave until butter is melted.

Step 2Add graham cracker crumbs and sugar to butter. Mix and pat flat for crust. Set aside.

Step 3FILLING: Place 2 8-oz boxes of cream cheese in a mixing bowl and beat with mixer until creamy.

Step 4Add sweetened condensed milk, lemon juice, and vanilla to cream cheese. Continue mixing until smooth. Pour over crust. Refrigerate.

Step 5NOTES: This can be eaten as is. I have also served this with fresh fruit, fruit compote, or pie filling. All are very good. Enjoy!
