Ingredients

  • SHORTBREAD CRUST
  • 21/4 cups flour
  • 2/3 cup confectioners' sugar
  • 1 cup butter, softened
  • FILLING
  • 11/2 cups seedless jam, used stonewall kitchen's sour cherry jam
  • STREUSEL
  • 1 cup flour
  • 1/4 cup cold butter
  • 1/2 cup dark brown sugar

How To Make jam pie bars

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Lightly spray 9 x 13 inch pan with cooking spray. Line with parchment paper, leaving a 2-inch overhang on all sides. Lightly spray the parchment with cooking spray.
  • Step 3
    Prepare crust: Combine flour, sugar and butter in mixer bowl. Beat on low until well combined.
  • Step 4
    Transfer dough to prepared pan. Press evenly over the bottom of the pan to the edges.
  • Step 5
    Place a sheet of parchment over the dough and line with pie weights(or popcorn kernels).
  • Step 6
    Bake for 30 minutes. Remove from oven and remove parchment paper and pie weights. Bake an additional 5 minutes.
  • Step 7
    Streusel: Combine flour, sugar and butter. Using fingers to combine, mix together until it looks like a coarse meal. Refrigerate until ready to use.
  • Step 8
    Jam Layer: Mix jam with spoon so it is not clumpy.
  • Step 9
    Pour jam over baked crust. Spread evenly over crust.
  • Step 10
    Sprinkle streusel over jam.
  • Step 11
    Bake 25 - 30 minutes until golden brown.
  • Step 12
    Let cool 20 minutes before cutting.
  • Step 13
    Slice into rectangles.
