Makes 16 Bars
Ingredients
- SHORTBREAD CRUST
- 21/4 cups flour
- 2/3 cup confectioners' sugar
- 1 cup butter, softened
- FILLING
- 11/2 cups seedless jam, used stonewall kitchen's sour cherry jam
- STREUSEL
- 1 cup flour
- 1/4 cup cold butter
- 1/2 cup dark brown sugar
How To Make jam pie bars

Step 1Preheat oven to 350 degrees.

Step 2Lightly spray 9 x 13 inch pan with cooking spray. Line with parchment paper, leaving a 2-inch overhang on all sides. Lightly spray the parchment with cooking spray.

Step 3Prepare crust: Combine flour, sugar and butter in mixer bowl. Beat on low until well combined.

Step 4Transfer dough to prepared pan. Press evenly over the bottom of the pan to the edges.

Step 5Place a sheet of parchment over the dough and line with pie weights(or popcorn kernels).

Step 6Bake for 30 minutes. Remove from oven and remove parchment paper and pie weights. Bake an additional 5 minutes.

Step 7Streusel: Combine flour, sugar and butter. Using fingers to combine, mix together until it looks like a coarse meal. Refrigerate until ready to use.

Step 8Jam Layer: Mix jam with spoon so it is not clumpy.

Step 9Pour jam over baked crust. Spread evenly over crust.

Step 10Sprinkle streusel over jam.

Step 11Bake 25 - 30 minutes until golden brown.

Step 12Let cool 20 minutes before cutting.

Step 13Slice into rectangles.
