Homemade Marshmallows

I think these would be fun to make just for the novelty of it and especially with kids. You could even pour out the mixture into a shallow pan & use cookie cutters to make different shapes! Try making your own Peeps for Easter, I could really get creative with this one. Haven't tried this one yet, but it is definitely on my "to do" list.

How to Make Homemade Marshmallows

  1. Sift together cornstarch and confectioners sugar. Grease a baking pan well.
Sprinkle 1 Tablespoon of the sugar mixture into the pan and tilt to evenly coat the bottom and sides. Do not shake out the excess.
  2. Combine the water and gelatin in a saucepan to soften. Let it sit for 5 - 7 minutes.
Stir in the granulated sugar and heat over low heat, stirring until all is dissolved. Combine the gelatin mixture, corn syrup, salt and vanilla with an electric mixer. ( A stand mixer would probably be best). Beat on high for 15 minutes until peaks form.
  3. Spread the mixture into the baking pan. Let sit until set, about 2-3 hours. Slice the mixture into desired sizes.
Roll each piece in the cornstarch mixture. Place on paper towells and let stand until dry. Store in airtight container.
