peanut butter, chunky
1/3 c
butter

medium bananas, mashed
1/2 c
molasses
1 c
sugar
2 tsp
vanilla

eggs
1 tsp
cinnamon
1/4 tsp
ginger
2/3 c
whole wheat flour
1.33 c
white flour
4 c
rice and wheat cereal, crushed
1/4 tsp
baking soda
1/2 tsp
salt
6 oz
chocolate chips
1 c
salted peanuts, chopped
8 oz
dates, chopped

How to Make Hiker Bars

Step-by-Step

  • 1Preheat oven to 350 degrees.
  • 2Then by hand: In a large bowl cream together peanut butter and butter.
  • 3Mix in bananas, molasses, sugar and vanilla.
  • 4Add eggs, one at a time, beating well after each egg.
  • 5Stir in the cereal and sift together dry ingredients and mix into batter.
  • 6Add chips, peanuts and dates.
  • 7Pour batter into greased 9 x 13 pan.
  • 8Bake in preheated 350 degree oven for 35 to 45 minutes.
  • 9Cut into bars.
