This was given to me 30 years ago and is very simple to make.

Ingredients

1/2 c
brown sugar
1/3 c
corn syrup, light
1
egg; beaten
1 1/2 tsp
vinegar
1/8 tsp
nutmeg
1 tsp
vanilla
1/2 c
raisins
2/3 c
oil
2 Tbsp
oil
2 c
flour
1 tsp
salt
4 Tbsp
cold water; more if needed

How to Make Helen's Butter Tarts

Step-by-Step

  • 1Two crust pie pastry; Cut in oil into flour and salt using pastry blender of crisscrossing 2 knives until dough is crumbled.
  • 2Sprinkle dough with cold water 1 tablespoon at a time.Toss with fork till all flour is moistened.
  • 3Roll into a ball. Roll out on floured table or board.Cut size to fit tart shell pan or cupcake pan.Can use glass the size to fit.
  • 4Put dough into tart shell pan or cupcake pan. Form it to fit.
  • 5Mix first six ingredients. Fold in raisins.
  • 6Fill tart shell or cupcake pan 3/4 full with filling
  • 7Bake at 450 degrees for 10 minutes then reduce to 350 degrees for 20 minutes.
