Ingredients
- CRUST
- 20-22 - amaretti cookies
- 9 - whole rectangles cinnamon sugar graham crackers
- 1/2 stick melted butter
- APPLE LAYERS
- 1 large granny smith apple,corred,halved and cut into 15 slices
- 4 tablespoons dark brown sugar
- FILLING
- 2-8 ounces blocks of cream cheese room tempeture
- 1-8 ounce roll of goat cheese crumbled
- 1 cup sugar
- 3 - egg yolks
- 1 - whole egg
- 1/4 teaspoon salt
- 2 tablespoons all purpose flour
- 1 teaspoon madagascar vanilla
- 1 medium lemon zest only
- 1/3 cup heavy cream, cold
- GARNISH
- 1 large granny smith apple cored, halved and slices into 15 slices
- 6 tablespoons sugar
How To Make granny's goat

Step 1Items needed for baking cheesecake: 1 8-inch spring form pan 1 14-inch piece of aluminum foil 1 shallow baking pan 2 times the size for spring form pan To Brule the apple slices on top of cheesecake I use a kitchen torch.

Step 2In food processor add Amaretti cookies and broken cinnamon graham crackers. Pulse 5-6 times add melted butter and pulse 3-4 more times crust is now ready for pan. Place crust mix in bottom of spring form pan and with a fork or spoon push crumbs up sides of pan about 1 ½ inches. Spread the rest around evenly in bottom of pan. Take a 14-inch piece of aluminum foil and cover bottom of pan and fold up the sides of pan set aside.

Step 3Core, half and slice granny smith apple and place slices in a circle patter on bottom of crust lined pan. Sprinkle dark brown sugar over top of apple slices. Place in oven under broiler on high for 2-3 minutes or until dark brown sugar has melted. Remove from oven and set aside. Preheat oven to 425 degrees for baking cheesecake*

Step 4To make filling in clean food processor bowl add cream cheese, goat cheese and pulse until blended then add sugar and pulse until smooth. Add the rest of the filling ingredients to processor bowl and pulse 6-8 times or until filling is smooth and creamy.

Step 5Pour filling into crust and place into a baking pan filled with hot water ½ way up sides of cheesecake. Place in preheated 425 degree oven bake for 10 minutes then reduce oven to 250 degrees for 1 hour. Remove cheesecake from water bath and let cool for at least 2 hours before you unmold cheesecake.

Step 6To garnish place apple slices around outside of cheesecake. Two slices standing up in the middle of cheesecake. Sprinkle heavily with sugar and use kitchen torch to Brulee apple slices. See photo NOTE:Yiou may place apple slices on cookie sheet and cover heavily with sugar and place under broiler on med/high until sugar strts to bubble. Oven vary so watch this closley if you use a oven broiler.
