Ingredients
- 1/2 cup white rice flour
- 1/2 cup potato starch (not potato flour)
- 1/2 cup cornstarch
- 1/4 cup corn flour
- 1/4 cup tapioca flour
- 2 teaspoons xantham gum or guar gum
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 4 tablespoons solid shortening. such as earth balance natural shortening
- 2 - eggs, large beaten
- 3/4 cup buttermilk or yogurt
- 1 - banana
- 1/2 cup chocolate chips
How To Make gluten free banana chocolate chip scones

Step 1Combine flours, starches and xantham or guar gum, baking powder, and baking soda. Preheat oven to 400 and Line large baking sheet with parchment.

Step 2Cut shortening into flour mix either by using pastry blender or 2 knives until it resembles small peas. Mash banana. Add sugar and mashed banana to flour mix.

Step 3Beat 2 eggs with either buttermilk or yogurt. And add to dry ingredients. Mix in chocolate chips. Drop batter onto baking sheet using ice cream scoop spaced 2 inches apart.

Step 4Bake 10-12 minutes until tops are lightly browned. You can brush melted butter to tops before baking for extra flavor. For added sweetness add 1/2 teaspoon vanilla.
