Gingerbread and Rum what a great combination!!

Ingredients

  • 1 c
    applesauce( use either sweet or unsweetened)
  • 1/4 c
    raisins
  • 1/4 c
    cranberries
  • 1/2 c
    rum
  • 1/3 c
    unsulfured light molasses
  • 1 tsp
    baking soda
  • 2
    eggs
  • 1/4 c
    sugar
  • 1/4 c
    vegetable oil
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    cinnamon( freshly grated is the bomb!)
  • 1/2 tsp
    ground ginger
  • 1/4 tsp
    ground cloves
  • 1/8 tsp
    salt

How to Make Gingerbread apple bars W/ Rum :D

Step-by-Step

  1. Heat oven to 350°F.
    Oil 8-inch square pan lightly.
  2. place raisins and cranberries in a sauce pan and pour in rum and bring to a boil and let simmer till rum is absorbed and set aside.
  3. Pour in applesauce into the raisin/cranberry pan.
    Cook and stir on low heat until mixture comes to a boil.
    Remove from heat.
  4. Stir in molasses and baking soda.
    Cool slightly
  5. Combine eggs and sugar in large bowl.
    Beat in 1/4 cup Crisco® Oil gradually
  6. Combine flour, cinnamon, ginger, cloves and salt in small bowl
  7. Add to egg mixture alternately with applesauce mixture, beginning and ending with flour mixture.

    Spoon into pan.
  8. Bake at 350°F for 30 minutes or until toothpick inserted in center comes out clean.

    Cool in pan on cooling rack.

    Cut into bars
