Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 cup shortening
- 1 - egg, slightly beaten
- 2/3 cup milk
- 2-3 tablespoons all-purpose flour
- - shortening or cooking oil for frying
- - powdered sugar
How To Make fried bread (maandazi)

Step 1In a medium mixing bowl combine the 2 cups flour, sugar, baking powder, and salt. Cut in the shortening till the pieces are the size of small peas. Make a well in the center.

Step 2Stir together the egg and milk. Add the egg mixture all at once to the flour mixture. Stir till the mixture forms a soft dough.

Step 3Turn out onto a lightly floured surface and knead for 2 to 3 minutes, adding the 2 to 3 tablespoons flour if necessary. Shape the dough into a ball. Return the dough to the bowl; cover with a damp towel. Let the dough rest for 20 to 25 minutes.

Step 4Turn dough out onto a lightly floured surface. Divide the dough in half. Roll one portion of the dough to a 12 x 6-inch rectangle. Cut the rectangle into nine 4 x 2 inch pieces. Repeat with the remaining dough.

Step 5Fry the pieces, a few at a time, in deep, hot fat (375°) about 1 minute per side or till crisp and golden brown. Drain on paper towels. Serve plain as a snack, or sprinkle with powdered sugar for a dessert.
