This is a wonderful brownie variation, and great for those who don't care for chocolate.
NOTE: This recipe can be doubled, but not tripled.

Ingredients

  • 1 c
    brown sugar, firmly packed, divided
  • 1/2 c
    butter, softened
  • 1 1/3 c
    flour
  • ·
    dash of salt
  • 2
    eggs
  • 1/2 c
    sugar
  • 1 tsp
    vanilla extract
  • 1/4 tsp
    salt
  • 1/2 c
    coconut, flaked
  • 1 c
    pecans, fine chopped

How to Make English Cherubs

Step-by-Step

  1. Preheat oven to 350. Prepare a 9" square pan with non-stick spray, parchment or grease and flour.
  2. In a large bowl, combine 1/2 of brown sugar,butter, flour and dash of salt. Mix until well blended.
  3. Press into bottom of pan.
  4. In small bowl, beat eggs till foamy.
  5. Add remaining brown sugar,1/2 c. sugar, vanilla and 1/4 tsp. salt. Mix well.
  6. Stir in coconut and pecans, and then spread over the batter in pan.
  7. Bake for 30 minutes or until lightly browned. Cool. Cut into 1-1/2" squares.
