Ingredients
- CHEESE FILLING
- 3 ounces cream cheese, softened
- 1 tablespoon sour cream
- 2 tablespoons sugar
- 1/8 teaspoon vanilla
- 3 tablespoons strawberry jam
- MUFFINS
- 1 1/2 cups flour, sifted
- 2 tablespoons double acting baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar1
- 1 - egg
- 2 tablespoons unsalted butter, melted
- 1/2 cup milk
- 1 tablespoon sugar for sprinkling

Step 1Preheat oven to 400 degrees. Grease muffin pans and set aside.

Step 2Beat together first 4 ingredients of cheese filling until smooth and creamy. Swirl in the jam and set aside.

Step 3Sift together flour, baking powder, sugar and salt in large mixing bowl. In another mixing bowl lightly beat the egg with a whisk or fork. Mix in melted butter, then milk. Stir in the cheese mixture just to combine. Add the liquid ingredients to the dry and fold with a rubber spatula just enough to moisten the flour mix.

Step 4Spoon into the muffin pan, filling 2/3 full. Bake 25-30 minutes or until golden brown. Cool in pan for 2-3 minutes and remove from pan.
