2 Tbspdouble acting baking powder

2 Tbspunsalted butter, melted

1 Tbspsugar for sprinkling
How To Make darla's strawberry cheesecake muffins

1Preheat oven to 400 degrees. Grease muffin pans and set aside.

2Beat together first 4 ingredients of cheese filling until smooth and creamy. Swirl in the jam and set aside.

3Sift together flour, baking powder, sugar and salt in large mixing bowl. In another mixing bowl lightly beat the egg with a whisk or fork. Mix in melted butter, then milk. Stir in the cheese mixture just to combine. Add the liquid ingredients to the dry and fold with a rubber spatula just enough to moisten the flour mix.

4Spoon into the muffin pan, filling 2/3 full. Bake 25-30 minutes or until golden brown. Cool in pan for 2-3 minutes and remove from pan.
