Make this at the holidays and is not too sweet. You can use any nuts of your choice also dried or fresh cranberries. You can use any chocolate of your choice for dipping.

Ingredients

  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 2 - eggs
  • 3/4 cup sugar
  • 1/3 cup oil
  • 1 tablespoon vanilla
  • 1/2 cup cranberries
  • 1 cup nuts of your choice
  • 8 ounces semi sweet chocolate, broken into small pieces

How To Make cranberry biscotti

  • Step 1
    Combine flour and baking powder in a bowl. Beat eggs,sugar,oil and vanilla in bowl with mixer until blended in another bowl.
  • Step 2
    Gradually add flour mixture mixing well after each addition. Stir in nuts and cranberries.
  • Step 3
    Use moistened hands to divide dough into 4 pieces and shape each piece into 7 inch log. Place on oiled baking sheet.
  • Step 4
    Bake at350 degrees for 20 to25 minutes until lightly browned. Cool 15 minutes. Transfer to cutting board and use serrated knife to cut each log into 1/2 inch thick slices .
  • Step 5
    Place cut sides down on baking sheet and bake 13 minutes or until lightly toasted cool.
  • Step 6
    Melt chocolate in 1 minutes intravels in microwave till melted. Or use double pan to melt on stove.dip bottoms of biscotti 1 at a time into chocolate. Lay down in plate cut sides down and let stand till chocolate is firm.
