My mom makes these every year. It is one of her favorite sweet treats.

Delicate and sweet, nobody will ever guess there's cottage cheese in the dough. Even though yeast is used in the recipe, it only rises once, and no kneading is involved. The texture is a cross between a yeast roll and a biscuit. Inside the dough is a sweet and buttery filling with a nice crunch from walnuts. They're fairly easy to make and perfect for someone who doesn't like kneading dough.

Ingredients

  • DOUGH
  • 1 package yeast
  • 1/4 cup warm water
  • 1 large egg
  • 1 cup small curd cottage cheese
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/4 cup butter, melted
  • 2 1/2 cups all-purpose flour
  • FILLING
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter, melted
  • 3/4 cup chopped walnuts
  • ICING
  • 1 cup powdered sugar
  • 1 tablespoon butter
  • 1 teaspoon vanilla, coffee, or maple flavoring, to taste
  • 2 tablespoons milk

How To Make cottage cheese rolls

  • Dissolve yeast in 1/4 cup of water.
