My mom makes these every year. It is one of her favorite sweet treats.
Blue Ribbon Recipe
Delicate and sweet, nobody will ever guess there's cottage cheese in the dough. Even though yeast is used in the recipe, it only rises once, and no kneading is involved. The texture is a cross between a yeast roll and a biscuit. Inside the dough is a sweet and buttery filling with a nice crunch from walnuts. They're fairly easy to make and perfect for someone who doesn't like kneading dough.

Ingredients
- DOUGH
- 1 package yeast
- 1/4 cup warm water
- 1 large egg
- 1 cup small curd cottage cheese
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1/4 cup butter, melted
- 2 1/2 cups all-purpose flour
- FILLING
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 3 tablespoons butter, melted
- 3/4 cup chopped walnuts
- ICING
- 1 cup powdered sugar
- 1 tablespoon butter
- 1 teaspoon vanilla, coffee, or maple flavoring, to taste
- 2 tablespoons milk
How To Make cottage cheese rolls

Step 1Dissolve yeast in 1/4 cup of water.

Step 2In a medium bowl, beat the egg slightly. Add in cottage cheese, sugar, salt, melted butter, and the yeast mixture.

Step 3Add flour and mix until a dough forms. Let it rest while making the filling.

Step 4Mix the filling ingredients together.

Step 5Roll the dough into a 10x14 rectangle.

Step 6Spread the filling on the dough.

Step 7Roll up the dough into a log.

Step 8Cut into 16 pieces.

Step 9Place on a large greased cookie sheet. Press down quite flat. Let rise in a warm place for 1 1/2 hours.

Step 10Preheat oven to 400 degrees F. Bake for 10 - 15 minutes.

Step 11Mix the icing ingredients.

Step 12Frost the rolls.
