My mom makes these every year. It is one of her favorite sweet treats.

Ingredients

  • DOUGH
  • 1 package yeast
  • 1/4 cup warm water
  • 1 large egg
  • 1 cup small curd cottage cheese
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/4 cup butter, melted
  • 2 1/2 cups all-purpose flour
  • FILLING
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter, melted
  • 3/4 cup chopped walnuts
  • ICING
  • 1 cup powdered sugar
  • 1 tablespoon butter
  • 1 teaspoon vanilla, coffee, or maple flavoring, to taste
  • 2 tablespoons milk

How To Make cottage cheese rolls

  • Step 1
    Dissolve yeast in 1/4 cup of water.
  • Step 2
    In a medium bowl, beat the egg slightly. Add in cottage cheese, sugar, salt, melted butter, and the yeast mixture.
  • Step 3
    Add flour and mix until a dough forms. Let it rest while making the filling.
  • Step 4
    Mix the filling ingredients together.
  • Step 5
    Roll the dough into a 10x14 rectangle.
  • Step 6
    Spread the filling on the dough.
  • Step 7
    Roll up the dough into a log.
  • Step 8
    Cut into 16 pieces.
  • Step 9
    Place on a large greased cookie sheet. Press down quite flat. Let rise in a warm place for 1 1/2 hours.
  • Step 10
    Preheat oven to 400 degrees F. Bake for 10 - 15 minutes.
  • Step 11
    Mix the icing ingredients.
  • Step 12
    Frost the rolls.
