coffee pecan chews

This is a secret family recipe so don't tell my mom I posted it. This recipe spans at least 3 generations of my family. I have no idea how old it is or who or where my grandmother got the recipe from. I do know that the recipe that my mom wrote out for me calls for butter or "oleo" and my grandmother always said that she never used anything but butter. "No matter how bad the Depression got, we always used butter, she would say". I've ONLY used butter because of this. I usually have to explain "its like a brownie".

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 tablespoons instant coffee crystals (i usually use folgers)
  • 1 teaspoon salt
  • 4 - eggs
  • 2 cups granulated sugar
  • 1 cup melted butter or margarine
  • 2 teaspoons vanilla
  • 1 cup chopped pecans

How To Make coffee pecan chews

  • Step 1
    Sift together flour, coffee, and salt. Set aside.
  • Step 2
    Beat eggs until foamy.
  • Step 3
    Gradually add sugar to the eggs and continue beating until stiff.
  • Step 4
    Stir in melted butter and vanilla.
  • Step 5
    Add dry ingredients and mix until well blended.
  • Step 6
    Stir in chopped pecans.
  • Step 7
    Pour into two greased 8 inch square pans. Bake in moderate oven (350 degrees F) 30-35 minutes.
