This is quite easy and can be made ahead of time so there is more time to enjoy guests. The sherbet can be substituted for other flavors and ice cream - the possibilities are endless.

Ingredients

  • 2 cups baked coconut macaroons, broken in small pieces
  • 1 cup chopped pecans
  • 1 pint heavy cream, whipped
  • 2 tablespoons sugar
  • 1 pint raspberry sherbet, softened
  • 1 pint lime sherbet, softened

How To Make coconut sherbet bars

  • Step 1
    Fold pecans, sugar, and macaroons into the whipped cream.
  • Step 2
    Spread 1/2 of mixture in a 9"x9" pan. Freeze.
  • Step 3
    Spread softened raspberry sherbet over the top of frozen macaroon mixture. Freeze
  • Step 4
    Spread softened lime sherbet over the top of the frozen raspberry sherbet. Freeze.
  • Step 5
    Spread the remaining 1/2 of macaroon mixture over the lime sherbet. Freeze.
  • Step 6
    Serve in squares or bars. Garnish as desired. I use raspberries and a little whipped cream. I use shaved chocolate and a little whipped cream if I use chocolate ice cream.........
