This is quite easy and can be made ahead of time so there is more time to enjoy guests. The sherbet can be substituted for other flavors and ice cream - the possibilities are endless.

  • 2 c
    baked coconut macaroons, broken in small pieces
  • 1 c
    chopped pecans
  • 1 pt
    heavy cream, whipped
  • 2 Tbsp
  • 1 pt
    raspberry sherbet, softened
  • 1 pt
    lime sherbet, softened

How to Make Coconut Sherbet Bars


  1. Fold pecans, sugar, and macaroons into the whipped cream.
  2. Spread 1/2 of mixture in a 9"x9" pan.
  3. Spread softened raspberry sherbet over the top of frozen macaroon mixture. Freeze
  4. Spread softened lime sherbet over the top of the frozen raspberry sherbet. Freeze.
  5. Spread the remaining 1/2 of macaroon mixture over the lime sherbet. Freeze.
  6. Serve in squares or bars. Garnish as desired. I use raspberries and a little whipped cream. I use shaved chocolate and a little whipped cream if I use chocolate ice cream.........
