Ingredients
- PANNA COTTA
- 2 teaspoons gelatin, unflavored
- oil for ramekins
- 1 can coconut milk (13 - 14 oz)
- 1 cup heavy cream
- 1/2 cup granulated sugar
- salt
- PEANUT BRITTLE
- 1/3 cup granulated sugar
- 1 tablespoon water
- 1/2 cup salted peanuts
How To Make coconut panna cotta with peanut brittle

Step 1Sprinkle the gelatin over 1/4 cup water and let stand until softened. Oil 8 4 oz ramekins.

Step 2Mix the coconut milk, heavy cream, sugar, and salt in a saucepan until hot. Add the gelatin mixture and pour into the prepared ramekins.

Step 3Place in fridge for 4 hours until set.

Step 4For the brittle, mix the sugar and water in a heavy skillet. Cook, swirling often until a deep caramel color.

Step 5Remove from heat and add the peanuts.

Step 6Pour onto a piece of foil until hardened.

Step 7Break up the brittle and serve over the panna cotta.
