This is a really good dessert that isn't too sweet but still a dessert.

Ingredients

  • PANNA COTTA
  • 2 teaspoons gelatin, unflavored
  • oil for ramekins
  • 1 can coconut milk (13 - 14 oz)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • salt
  • PEANUT BRITTLE
  • 1/3 cup granulated sugar
  • 1 tablespoon water
  • 1/2 cup salted peanuts

How To Make coconut panna cotta with peanut brittle

  • Step 1
    Sprinkle the gelatin over 1/4 cup water and let stand until softened. Oil 8 4 oz ramekins.
  • Step 2
    Mix the coconut milk, heavy cream, sugar, and salt in a saucepan until hot. Add the gelatin mixture and pour into the prepared ramekins.
  • Step 3
    Place in fridge for 4 hours until set.
  • Step 4
    For the brittle, mix the sugar and water in a heavy skillet. Cook, swirling often until a deep caramel color.
  • Step 5
    Remove from heat and add the peanuts.
  • Step 6
    Pour onto a piece of foil until hardened.
  • Step 7
    Break up the brittle and serve over the panna cotta.
