This is a cute Easter dessert that is easy to put together.

Ingredients

  • 4 - egg whites
  • 1/2 teaspoon cream of tartar
  • 3/4 cup sugar
  • 1 cup coconut, shredded; divided
  • 1 package jello instant pudding, vanilla
  • 2 cups cold milk
  • 1 package candy, egg like; m&m's or jelly beans

How To Make coconut meringue nests

  • Step 1
    Heat oven to 250 degrees
  • Step 2
    Beat egg whites and Cream of Tartar on high speed for 5 minutes or until soft peaks form.
  • Step 3
    Add sugar 1 tsp at a time, beating constantly after each addition until stiff peaks form.
  • Step 4
    Beat another 3 minutes or until glossy.
  • Step 5
    Gently stir in half of coconut.
  • Step 6
    Spoon meringue into 10 mounds on each of 2 parchment-lined baking sheets.
  • Step 7
    Use back of spoon to form into 2.5" rounds shapes.
  • Step 8
    Make a depression in the center of each mound to resemble a nest.
  • Step 9
    Sprinkle remaining coconut around edges. Press gently into the meringue to secure.
  • Step 10
    Bake 50-60 minutes until meringues are dry and coconut is browned.
  • Step 11
    Cool completely on baking sheets.
  • Step 12
    Meanwhile prepare pudding. Refrigerate til ready to use.
  • Step 13
    Spoon pudding into nests just before serving. Top with candies.
