This is a delicious little treat to fix anytime. I seem to usually make these at Christmas.

Ingredients

  • 12 medium medjool dates
  • 16 cups chopped pecans
  • 1/4 cup coconut, shredded

How To Make coconut date balls

  • Step 1
    Pit the medjool dates and soak them in warm water for about 10 minutes until they soften.
  • Step 2
    Place the dates and pecans in the bowl of a large food processor. Blend on high until a thick dough is formed and the mixture feels sticky.
  • Step 3
    Scoop about 1 - 2 tablespoons of the mixture and use your hands to roll into a ball.
  • Step 4
    Roll the date balls into shredded coconut, pressing gently so it adheres.
  • Step 5
    Freezing Instructions - After rolling the balls, freeze on a baking sheet until they are solid. Once frozen, transfer to a freezer-safe container or bag. When needed, thaw in the fridge overnight.
