Ingredients
- 12 medium medjool dates
- 16 cups chopped pecans
- 1/4 cup coconut, shredded
How To Make coconut date balls

Step 1Pit the medjool dates and soak them in warm water for about 10 minutes until they soften.

Step 2Place the dates and pecans in the bowl of a large food processor. Blend on high until a thick dough is formed and the mixture feels sticky.

Step 3Scoop about 1 - 2 tablespoons of the mixture and use your hands to roll into a ball.

Step 4Roll the date balls into shredded coconut, pressing gently so it adheres.

Step 5Freezing Instructions - After rolling the balls, freeze on a baking sheet until they are solid. Once frozen, transfer to a freezer-safe container or bag. When needed, thaw in the fridge overnight.
