I can't remember where this recipe came from, but, it gets rave reviews every time I make it. The BEST Bread pudding I have ever tasted, and it's so easy to make.

Ingredients

  • 8 oz
    cream cheese, room temperature
  • 1 c
    sugar
  • 4 large
    eggs
  • 2 c
    milk
  • 1 c
    cream of coconut
  • 3 Tbsp
    butter, melted
  • 1/2 c
    coconut, flaked
  • 1/2 c
    chopped pecans
  • 1 large
    french bread loaf

How to Make Coconut Cream Bread Pudding

Step-by-Step

  1. Cut bread into 1 inch cubes, and preheat oven to 350.
  2. Beat cream cheese at low speed until creamy and smooth.
  3. Add sugar and eggs, beat at medium speed approx. 2 mins or until sugar is dissolved
  4. Stir in milk, cream of coconut, melted butter, coconut and pecans.
  5. Stir in bread cubes and let stand 5 mins. to soak up liquid.
  6. Pour mixture into 13X9 pan, sprayed with cooking spray, and bake 35 mins or until set.
