This has been a favorite bar in the Charlebois family for years. They always made a big batch to take on vacation. When I joined the family, it was my turn to step up to the plate and boy, did I find out how good they were. We have to ration them out so that they last the whole trip!

Ingredients
- 1/2 pound butter, room temperature
- 1/2 cup white sugar
- 1/3 cup brown sugar, light
- 2 cups all purpose flour
- 1 large egg yolk, reserve white
- 2 tablespoons cinnamon
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
- 1/4 cup cinnamon & sugar for sprinkling (optional)
How To Make cinnamon bars

Step 1Preheat oven to 325 degrees F. Grease large cookie sheet

Step 2Cream butter and sugar together.

Step 3Separate egg and set aside egg white.

Step 4Gradually add flour, egg yolk, cinnamon, and vanilla to creamed mixture.

Step 5Put on greased cookie sheet and pat down to about 1/4" thick.

Step 6Spread egg white on top of dough with pastry brush.

Step 7Sprinkle nuts on top. Add cinnamon & sugar if you like, also.

Step 8Bake for approximately 22 - 25 minutes. Makes 24 bars
