This is a favorite recipe of mine from my grandmother. Tastes great and isn't that hard to make. I usually make 2 and freeze one of them.

Ingredients

  • 1 c
    all purpose flour
  • 1/2 c
    cocoa powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2
    eggs at room temperature
  • 1/4 c
    melted butter
  • 1/4 c
    oil
  • 3/4 c
    brown sugar, firmly packed
  • 1 tsp
    vanilla extract
  • 1 1/2
    shredded zucchii
  • 1 c
    semi-sweet chocolate chips ,divided

How to Make Chocolate Zucchini Bread

Step-by-Step

  1. Preheat oven to 350 degrees.Grease a 9x5 loaf pan. In bowl whisk together the flour cocoa powder,baking soda, and salt.
  2. In a large bowl add the eggs melted butter,oil,vanilla and brown sugar.Stir until smooth.Stir the dry ingredients into the wet ingredients. Stir in the shredded zucchini until just combined. Stir in 3/4 cup of the chocolate chips.
  3. Pour batter into prepared pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top of bread. BAke for 50-60 minutes till golden brown.
  4. Can also freeze bread by wraping plastic wrap around it and then foil. Will keep for one month.
