chocolate zucchini bread

This is a favorite recipe of mine from my grandmother. Tastes great and isn't that hard to make. I usually make 2 and freeze one of them.

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs at room temperature
  • 1/4 cup melted butter
  • 1/4 cup oil
  • 3/4 cup brown sugar, firmly packed
  • 1 teaspoon vanilla extract
  • 1 1/2 shredded zucchii
  • 1 cup semi-sweet chocolate chips ,divided

How To Make chocolate zucchini bread

  • Step 1
    Preheat oven to 350 degrees.Grease a 9x5 loaf pan. In bowl whisk together the flour cocoa powder,baking soda, and salt.
  • Step 2
    In a large bowl add the eggs melted butter,oil,vanilla and brown sugar.Stir until smooth.Stir the dry ingredients into the wet ingredients. Stir in the shredded zucchini until just combined. Stir in 3/4 cup of the chocolate chips.
  • Step 3
    Pour batter into prepared pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top of bread. BAke for 50-60 minutes till golden brown.
  • Step 4
    Can also freeze bread by wraping plastic wrap around it and then foil. Will keep for one month.
