It's a great sweet and tangy dessert that can be made in a number of different ways. I love it because I'm such a chocolate fan.
Blue Ribbon Recipe
Sweet and tart, this is a special chocolate dessert. The tart is rich, smooth, and creamy with hints of raspberry flavor in every bite. We enjoyed this mix of dark and semi-sweet chocolate with the raspberry puree. The crust adds a hint of cinnamon to the tart that adds a whole different level of flavor. It reminds us of a raspberry dark chocolate truffle. Yum!
Crust: Crush crackers and cookies by hand or blender. Add to bowl and combine cinnamon and butter. Place in a 10-inch tart and set in the freezer to chill. About 10-15 mins.
Filling: In a saucepan, combine frozen raspberries, sugar, and lime juice. Cook on med heat for 10 mins.
Strain through a fine sieve.
Heat heavy cream on the stove until warm. Add chocolate to a bowl. Pour heavy cream over the chocolate and set for 1 min.
Pour in the puree and whisk until combined.
Pour filling into the chilled tart. Set in freezer for 30-40 mins. Then move to the fridge for 2-4 hours or until set.
Raspberries: Place raspberries in a bowl. Add lime zest and sprinkle with sugar. Arrange on top of the tart.
