Ingredients

  • CANNOLI SHELLS
  • 1 1/2 cups 00 flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons salt
  • 1 tablespoon cocoa powder
  • 4 tablespoons cold butter, cut into 4 pieces
  • 1/4 cup Marsala wine
  • 1 tablespoon white vinegar
  • 2 large egg yolks
  • 1 large egg white for brushing
  • oil for deep frying
  • CANNOLI FILLING
  • 2 1/2 cups ricotta cheese
  • 1 cup dark chocolate
  • 1 cup powdered sugar
  • 1/2 cup minced pistachio nuts

How To Make chocolate pistachio cannoli

  • Step 1
    For the shells Combine the flour, sugar, salt, and cocoa powder. Place in a stand mixer and add 1 Tbsp butter at a time, mixing until it looks like sand.
  • Step 2
    Add the wine, vinegar, and egg yolks, mixing them until they come together.
  • Step 3
    Knead until it is softened. Flatten it out and wrap it in plastic wrap, and place it in the fridge for one hour or up to 24 hours.
  • Step 4
    Drain the ricotta cheese in a mesh strainer over a large bowl for 1 hour to 24 hours.
  • Step 5
    Remove the dough from the fridge and let it come to room temperature for about 30 minutes.
  • Step 6
    Divide the dough into 12 pieces. Roll out each piece with a pasta machine. Roll as thin as possible.
  • Step 7
    Then roll it around a cannoli tube. Seal them with the egg white. Once all are done, heat oil for deep frying to 400 degrees.
  • Step 8
    Place the tubes 4 at a time in the hot oil and fry for 2 minutes. Remove to a paper plate lined with paper towels. Let cool until able to remove the tubes. set aside.
  • Step 9
    Place the dark chocolate in a bowl in the microwave and microwave until melted.
  • Step 10
    Beat the ricotta cheese until fluffy, and add the powdered sugar and melted chocolate, mixing well.
  • Step 11
    Stir in half the pistachios.
  • Step 12
    Pipe into the shells and dip the ends in the remaining crushed pistachios.
