My family really loves these oatmeal cookie bars with chocolate running all through the middle and more oatmeal cookie to top it off!

Ingredients

butter, softened
2 c
light brown sugar
2
eggs
2 tsp
real vanilla
2 1/2 c
sifted all-purpose flour
1 tsp
salt
1 tsp
baking soda
3 c
quick cooking oatmeal

FILLING

1-12 oz
pkg. chocolate chips (semisweet)
1-15 oz
can sweetened condensed milk
2 Tbsp
butter
1/2 tsp
salt
1 c
chopped nuts (optional)
2 tsp
real vanilla

How to Make Chocolate Oatmeal Cookie Bars

Step-by-Step

  • 1Cookie Base- cream butter and sugar well. Add eggs and vanilla. Sift flour, soda and salt together. Add oatmeal, then add dry ingredients to creamed mixture. Set aside.
  • 2Filling- Melt chocolate chips, milk, butter and salt in top of double boiler. When smooth add nuts and vanilla. Spread 2/3 of oatmeal mix in greased 9x13 inch pan. Cover with chocolate mixture. Dot with remaining oatmeal mix. Bake 25-30 or til set at 350 degrees.
