I was finally cleaning out a basement cupboard and came across my mother's old, hand written recipe "notebook" This particular one was a favorite from my grandmothers collection. . Hope you all enjoy this..

Ingredients

  • 6 - egg whites, room temperature
  • 3/4 teaspoon creme of tartar
  • 2 cups sugar
  • 2 cups broken soda crackers, chopped coarse not fine
  • 1 cup pecans, chopped
  • 2 packages prepared whipped topping (cool whip) the original recipe, called for whipped cream..cool whip is a quick substitute.
  • 1/2 teaspoon vanilla
  • 2 cups cherry pie filling

How To Make cherry tort

  • Step 1
    Beat egg whites till frothy, add creme of tartar and beat into peaks. Add sugar gradually.
  • Step 2
    Fold in crackers and nut meats.
  • Step 3
    Spread into 9X11 pan. bake 25 minutes at 350 degrees.
  • Step 4
    Add vanilla to whipped cream.
  • Step 5
    When cake is cooled, cover with whip cream and chill 1 hour.
  • Step 6
    After 1 hour, top with cherries and refrigerate 4 to 6 hours or overnight
