My mother always makes this during the holidays. With them coming upon us (seemingly quicker every year), I wanted to take the chance to share this recipe so others can enjoy it. With a shortbread-style crust, cherry and walnut filling, and coconut topping it, not only makes an amazing dessert, but can be easily "dressed up" for an attractive presentation.

Ingredients

  • CRUST
  • 2 cups flour
  • 1/3 cup sugar
  • 3/4 cup butter or margarine (softened)
  • FILLING
  • 2 eggs, slightly beaten
  • 1 cup brown sugar, firmly packed
  • 1/3 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1-10 oz jar maraschino cherries,drained,chopped; reserve juice & 6 cherries
  • 1/2 cup walnuts, chopped (reserve some halves for decorating)
  • FROSTING
  • 2 tablespoons butter, softened
  • 2 1/2 cups powdered sugar
  • 3-4 tablespoons reserved cherry juice
  • shredded coconut for decorating
  • walnut halves
  • reserved cherries, cut in half

How To Make cherry bars

  • Step 1
    Crust: Heat oven to 350 degrees. Combine crust ingredients until crumbly. Press into pan and bake 12-15 minutes until light brown.
  • Step 2
    Filling: Combine filling ingredients and pour over baked crust. Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool. Frost.
  • Step 3
    Frosting: Combine butter, powdered sugar, and cherry juice. Spread frosting on baked filling and sprinkle with coconut, then use walnut halves and cherry halves to decorate top.
