My mother always makes this during the holidays. With them coming upon us (seemingly quicker every year), I wanted to take the chance to share this recipe so others can enjoy it. With a shortbread-style crust, cherry and walnut filling, and coconut topping it, not only makes an amazing dessert, but can be easily "dressed up" for an attractive presentation.

Makes a 13x9 inch pan
Ingredients
- CRUST
- 2 cups flour
- 1/3 cup sugar
- 3/4 cup butter or margarine (softened)
- FILLING
- 2 eggs, slightly beaten
- 1 cup brown sugar, firmly packed
- 1/3 cup flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1-10 oz jar maraschino cherries,drained,chopped; reserve juice & 6 cherries
- 1/2 cup walnuts, chopped (reserve some halves for decorating)
- FROSTING
- 2 tablespoons butter, softened
- 2 1/2 cups powdered sugar
- 3-4 tablespoons reserved cherry juice
- shredded coconut for decorating

How To Make cherry bars

Step 1Crust: Heat oven to 350 degrees. Combine crust ingredients until crumbly. Press into pan and bake 12-15 minutes until light brown.

Step 2Filling: Combine filling ingredients and pour over baked crust. Bake at 350 for 20-25 minutes or until toothpick comes out clean. Cool. Frost.

Step 3Frosting: Combine butter, powdered sugar, and cherry juice. Spread frosting on baked filling and sprinkle with coconut, then use walnut halves and cherry halves to decorate top.
