cheesecake diamonds
I found this recipe in my Better Homes & Gardens Dessert Cookbook that a friend gave me as a gift in Jan 1974! I make them whenever I don't want to make a whole cheesecake. Always gets rave reviews! Sorry that I don't have a picture. I will post one the next time I make them.

Ingredients
- 5 tablespoons butter
- 1/3 cup packed brown sugar
- 1 cup all-purpose flour
- 1/4 cup chopped walnuts
- 1/2 cup granulated sugar
- 1-8oz. package cream cheese
- 1 - egg
- 2 tablespoons milk
- 1 tablespoon lemon juice
- 1/2 tablespoon vanilla
How To Make cheesecake diamonds

Step 1Pre-heat oven to 350 degrees. Cream butter and brown sugar; add flour and nuts and mix well. Set aside one cup mixture for topping. Press the remainder in the bottom of a 8x8x2" baking pan. Bake for 12-15 minutes.

Step 2Blend sugar and cream cheese until smooth. Add egg, milk,lemon juice & vanilla. Beat well. Spread over the top of the baked crust; sprinkle with the reserved topping.

Step 3Return to oven. Bake 25 minutes more. Cool, then chill. Cut in diamonds.
